		<description>Roth&#039;s Private Reserve was part of a Christmas gift of small farms artisnal Wisconsin cheese and this one won my heart. It&#039;s dry enough to tease apart in curds, but lay a chunk on your tongue and let the exquisite melt begin- roasted nuts, a slight sweet, distinctive but not strong...you find yourself humming unconsciously as it rolls across your tastebuds. Crisp Fuji apples and blanched almonds are good pairings, but this handwashed organic raw cow&#039;s milk cheese can stand very much on its own. 
My hat&#039;s off, with gratitude.</description>
