Valdeon
Valdeon is a salty, tangy, Blue cheese from Spain made from cow and goat’s milk. It might cause you to cough, like a sharp, hardened Chevre cheese. A child might even characterize the Valdeon as ’spicy’. It’s a cheese you can’t have more than a few tastes of even if you consider yourself a cheese lover. It’s taste is complex, beyond strong, and it is far more of a crumbly cheese than an Epoisses or Brie, but far softer than a Parmesan. It’s wrapped in Sycamore leaves which affect the flavor of the cheese but don’t cause much difficulty in eating it. I recommend it, but only in small doses.
